Highlights: Summer soups,'s and sautés with cool and light desserts kicks off this summer based culinary program. Friday night Philosophers Pub Dinner & Discussion series - Saturday Interactive Culinary Workshop - 5 course Tasting Dinner featuring dishes from class participants. July 6th Philosophers Pub: Going Beyond Local
Highlights: Buy local then What? As the locovore movement increases in popularity, there is often a common perception that buying local foods is the end-all be-all. How to prepare those local foods and enhance their special properties is often lost. Often, the value and health benefits of local foods are ruined by using processed cooking mentality. This special dinner and discussion series will explore how preparing local food can be quite different from frozen processed foods.

Highlights: The Glory Days of the Adirondack Grand Hotels. The Lake Clear Lodge and Retreat is one of the last original Adirondack lodges still open to the public. The Saranac and St. Regis region was once filled with many of the finest examples of the Adirondack Grand Hotel including the Saranac Inn, the Paul Smith's Hotel and the Wawbeek among others.
